  4. In a heavy bottomed pan heat 1 tblspn of butter. Add the preboiled beans. Add little salt and black pepper as per taste as the chicken stock is already salty. Cook it for a couple of mins then add the shreded chicken and the chicken stock. Check the seasoning and Cook it for 10 mins.
  5. The healthy chicken and bean soup is ready to serve. Serve hot.

You can, of course, substitute canned beans, just drain them. The soup can also be frozen in a sturdy plastic container, or a ziploc bag. Very hearty for a soup, so my husband and son loved it as a meal. Only change I made was to add a can if black beans. And yes, the dollop of sour cream is a must!
