- In a sufuria on medium heat, saute onions
- Add the tomatoes, salt, ginger and garlic paste and mix till tomatoes are marshy
- Add the cut vegetables and add in the lemon juice and mix then add a little water cover and let cook
- When the water has evaporated, check whether the veges are done and adjust seasoning
- If done, remove from heat, if not add a little water to help them cook
- The brinjal okra curry is now ready
