- Prepare 1 Cauliflower (cut in small pc)
- Make ready 2 Carrot (medium sized)(cubes)
- Get 3-4 Potatoes (cubes)
- Prepare 2 Capsicum (cubes)
- Get 2 Tomatoes (medium sized) (finely chopped)
- Get 1 cup Pea
- Get 1 cup Spring onion (chopped)
- Make ready 1 small pc Ginger (cut in Julienne)
- Take 1 tbsp Zeera (cumin seeds)
- Take 3-4 Whole Red button chilli (sabut lal gol mirch)
- Make ready 1/2 cup Yoghurt
- Make ready To taste Salt
- Make ready 1 tsp Mustard seed (Rai Dana)
- Take 7-8 Curry leaves
- Make ready 2 tbsp Garlic (chopped)
- Take 2 tbsp Red chilli flakes
- Make ready 1 tsp Haldi (turmeric powder)
- Get 2 tbsp Chicken powder (optional)
- Make ready 3-4 Fresh green chilli
- Take 1/2 cup Oil
Delicious side dish made using mixed veggies and paneer. This taste so yummy with roti, chapati or pulao. Very easy to make and taste so healthy too. If you have bits and pieces of veggies lying in the fridge then this is a great recipe to try.
Steps to make Mix sabzi / mix veggies:
- Heat oil, add mustard seeds, cumin seeds, whole red button chilli, garlic & curry leaves, sauté all for couple of seconds
1. Then add cauliflower & potatoes with a splash of water and cover for 2 minutes
1. Add carrot & tomatoes with chilli flakes, turmeric & salt, again cover for couple of minutes
1. When veggies are more than half done add pea & capsicum and mix it well
1. Add yogurt with chicken powder, mix it well. Cover for couple of minutes
1. Lastly add spring onion, mix it well,cover and turn off the stove
1. Before serving add ginger & fresh green coriander & green chillies
1. Tadda !!! - Ready to eat - Serve hot with chapati
