- Cut cauliflower into small florets discarding the stalks.Smear little salt.Add 1/4th cup water in a microsafe bowl and immerse the cauliflowers.Microwave high power for 2 minutes.Toss and microwave for 2 minutes.The florets should not be fully cooked.
- Heat 1 tsp oil in a wok.Fry 1 chopped onion till transparent.Make a paste of curd,cashewnuts,poppy seeds,malai or fresh cream,green chillies.Add the fried onion and make a paste of all.Add ginger garlic paste.Scrape fresh coconut.
- Heat 2 tbsp oil and fry the sliced onion crispy brown.Set aside.In the remaining oil sprinkle half crushed whole garam masala.Toss the wet masala for few minutes to remove the raw smell of onion garlic.Add salt and sugar to taste.Add 1 pinch red chilli powder and garam masala.Add the half steamed cauliflowers and toss once.Pour in the microsafe bowl and sprinkle ghee.Microwave high power for 2 minutes.Toss and microwave for 1 minute or till done and masala coats cauliflower.
- Sprinkle ghee and garnish with fried onion,chopped coriander and few raisins.Serve hot with rice,pulao,puris or paratha.
