Stir for few seconds on low flame. Peel & cut the big chunk of yum & potatoes into smaller cubes. Wash them & rub with salt & turmeric. Fry the yum pieces in batches.

Instructions to make Yam Curry/Ol er dalna:
  1. Peel the outer skin of yam and potato and cut into small cubes.Heat water with little salt and boil yam and potato 2 pressures.Release steam after 2 minutes.Check softness.Smear little salt and turmeric.Heat oil in a wok and fry the yam and potato.
  2. Add ghee to the remaining oil and fry dry red chilli.Set aside.Sprinkle hing and bay leaf.Add ginger,cumin,dum aloo masala,grated coconut,tomato puree,turmeric and red chilli powder.Add salt and sugar to the masala and toss.Add the fried yam and potato.Add water and boil for 3 minutes till masala coats the yam.Sprinkle garam masala and grated coconut and serve with rice or any Indian bread.
