- Wash and clean the leaves.
- Heat a pan and add the washed leaves and cook in medium flame.Cook until the leaves reduce in volume.
- Once the palak changes its colour immediately add the palak leaves containing ice cold water
- Now make a puree of palak adding ginger, and green chilli.keep the palak puree aside.
- Making the palak gravy: *Heat oil/ghee/butter in a pan.Add the cumin seeds and bay leaf.. add the finely chopped onions and garlic.add the finely chopped tomatoes. Fry it transparent
- Add the palak pure and stir well.add water as required adjusting the consistency.then add the turmeric powder, red chilli powder and salt.simmer for 4-5 minutes. palak has to cook and thicken.stir well and add the boild potatoes nd add garam masala powder
