  3. Take a saucepan put it on medium flame, add 1 1/2 tbsp oil,add mustard seeds and cumin seeds, when it starts to splutter add chopped onion and curry leaves saute for two minutes.
  4. Now add chopped eggplants and potatoes, add turmeric powder, red chilli powder, coriander powder, salt, give it a mix add 1/4 cup water, close the lid and let it cook on low flame.
  5. When it's half done, open the lid add in the chopped tomato and garam masala powder, mix well, close the lid, cook again untill it's done. Garnish with some chopped coriander leaves.
