Steps to make Luchi & Alur Dom / Puri with Potato Curry:
  1. Luchi/Pure - Place a refiend flour or Maida in a bowl, make a well in the center, add pinch of salt and little bit of oil and mix.
  2. Add lukewarm water and khnead into a dough. Cover and rest for 10-15 min to rise.
  3. Divide the dough into small equal portions. Press a portion of the dough flat on a rolling board and roll out. Using little plain flour for rolling and roll it on round shape like puri.
  4. Heat oil in a deep pan and add the puri and fry it.
  5. Alur Dim- Boiled the potato complitely.
  6. Heat oil in a pan add some spices, red chilli whole & cumin seeds & satue till the fragrent.
  7. Then add ginger paste & salt and all the masala and little bit of water and stire.
  8. Then add green chilli & tomato and mixed. Cover and cook 2-3 min.
  9. Add sugar & the boiled potato. Cover and cook 5 min in low flame & then add water and stir.
  10. Again cover & cook 5 min and then add ghee and garam masala powder.
  11. Garnishing with some Coriander leave and serve hot with bengali Luchi.
