The ingredients needed to make Lauki Kofta:
  1. Prepare 250 gms FOR KOFTAS - Grated lauki/ bottlegourd -
  2. Prepare Besan/ gram flour - 1 /2 cup
  3. Make ready Salt/ namak – as per taste
  4. Prepare Red chilli/ lal mirch powder and fennel/ saunf as per taste
  5. Prepare 1 pinch Asafoetida/ heeng -
  6. Get 1/2 cup FOR GRAVY - Malai/ cream -
  7. Make ready 1/2 teaspoon Cumin seeds/ jeera -
  8. Prepare Tomato/ tamatar puree - 1 and 1/2 cups
  9. Prepare 1 cup Curd/ dahi -
  10. Get 1 teaspoon Whole garammasala -
  11. Get Turmeric/ haldi, red chilli/ lal mirch powder, coriander/ dhaniya
  12. Prepare to taste garam masala and salt/ namak according
  13. Take 1 teaspoon Ginger/ adarak and green chilli/ hari mirch paste -
  14. Prepare Oil/ tel - 2 tablespoons for gravy and remaining for deep frying
  15. Prepare Chopped coriander leaves/ dhaniya patta for garnishing the curry
Steps to make Lauki Kofta:
  1. Mix all the ingredients of kofta and make medium size balls.
  2. Heat enough oil on medium flame and fry the koftas till it gets golden brown colour. Set them aside and let us prepare the gravy for curry.
  3. Heat oil in a pan, add jeera. Add whole garam masala and saute for 2 minutes on low flame.
  4. Now add ginger and chilli paste and saute for 2 minutes on low flame.
  5. Add tomato puree, red chilli powder, coriander powder and turmeric. Saute until the oil gets separated from spices on medium flame.
  6. Add beaten curd, malai and stir continuously the curry until gravy starts boiling. Now add enough water, koftas and add remaining spices and salt.
  7. Cook for 7-8 minutes on medium flame. Switch off the gas and add chopped coriander in the gravy.
  8. Delicious lauki kofta is ready to be served with hot phulkas/ rice!
