Made with aromatic whole spices, wadiyan and basmati rice, this wadi pulao or biryani is a heathy meal for the whole family. This Punjabi wadi chawal is also called as Wadiyan wale chawal. The ingredients needed to make Chawal Vadi (Rice curry):
- Get 1 cup Rice soaked for 20 mins
- Take 2 tablespoons Oil
- Get 2 Bay leaves
- Prepare 1 teaspoon Zeera
- Take Pinch Hing
- Get 2-3 green cardamoms
- Prepare 1/2 inch stick Cinnamon
- Take 1 star anise
- Get 2-3 Full red chillies
- Take to taste Salt
- Make ready 1 teaspoon Turmeric powder
- Make ready 1 teaspoon Coriander powder
- Prepare 1/2 Cup Green Peas
- Prepare as required Vadi (Any available in market) if it is big in size break into two
- Get For Masala-
- Take 1 Onion medium sized
- Prepare 2 Tomatoes medium sized
- Make ready 2 green chillies
- Take 1/2 inch Ginger
- Prepare 3-4 cloves Garlic
- Get 1 spoon lemon juice
- Prepare as required Green Coriander for garnishing
It is a lifesaver on days when you simply cannot think of what to make !!! The best part of wadiyon wale chawal is that it can not only be relished as it is but can act as a main curry with rotis. In our Punjabi household we use it as curry. Add the dal vadi and sauté for few minutes till it turns brown.
Instructions to make Chawal Vadi (Rice curry):
- Soak rice and keep aside.
- Take onion, tomato, green chilli, ginger and garlic in a mixer and make a smooth paste.
- Now take a cooker add oil heat it. Now add jeera and pinch of hing along with whole spices.
- Add onion tomato paste and sauce it for 5 to 6 minutes on medium flame.
- Once masala is roasted nicely add salt, red chilli, turmeric powder and coriander powder and mix it well.
- Add 1 to 2 tablespoons of water to the masala and cook till you get nice aroma and masala leave the oil
- Now add green peas and wadi to this again sauté it.
- Now add rice and roast it for 3 to 4 minutes.
- Add 4 cups of water and pressure cook rice till 2 whistles. Close the gas and wait for 10 minutes
- Before serving garnish it with green coriander and lemon juice.
In our Punjabi household we use it as curry. Add the dal vadi and sauté for few minutes till it turns brown. Method:-Put ginger in a bowl and add rice. Heat sufficient oil in a kadai. Finely chop green chillies and add to the bowl.
