Bihari Mutton Curry is my Mother's best recipe. For this mutton curry, she does not use any readymade masala. In fact she picks all the whole spices and then grinds them at home and I guess, it is for this reason, it tastes so good. She says, she learnt it from Grandmother.

Steps to make Mutton curry Traditional Bihari Style:
  1. Clean mutton pieces properly and try to remove water by pressing. Add all Merination items to it and mix well. Keep it in the fridge for 3-4 hours or overnight. Or you can make it at the same time also.
  2. Get the meat at room temperature when you are ready to cook. Now take a patila in which you will cook mutton. Keep merinated mutton in it.
  3. Now cut onions in big chunks. one medium size in 5-6 pieces. Add onions.. ginger garlic paste, Black pepper, cinnamon stick, black cardamom, cumin- coriander seeds, all spice powders.
  4. Now pour mustard oil as per the requirement to cook mutton. Now mix everything with your hands. Give a 4-5 minutes mix rubbing all the things with each other. Now swicth on the gas and put the "pateela" on high flame. Add red chili powder and whole chilies.
  5. After few minutes cover the "pateela" and cook mutton in low to mid flame. Mutton and onions will release lot of juices and water. Let mutton cook in it's own juices on "dum". It will take 1 - 1.5 hours to cook it completely. Keep checking in regular intervals.
  6. Once the mutton is cooked and oil is released and spices becomes fragrant then add water for gravy. Put garam masala and ghee. Cover it. Check for desired consistency. you can check with a help of toothpick also whether the mutton is cooked or not.
  7. It is done. Relish it with Chapati and Boiled rice. Believe me!! It's yummm.
