In microwave safe bowl add all vegs,add a pinch of soda bi carb,and 1/2 tsp salt and 1/2 cup of water..cover with lid & cook on 80 power level for 5 mins.
- As the vegetables being cooked.. prepared gravy. In kadhai add/ heat oil,add chillies, ginger garlic paste, cinnamon, cloves and coriander seeds masala, mix and saute on slow flame for 4-5 mins…add onion paste,saute for 2 mins..add turmeric powder, garam masala,dhania- jeera powder, and saute till brown in colour.
- Add butter,mix add cashews nut and poppyseeds paste,mix and add tomatoes puree,salt.. mix and cook for 5 mins till gravy like mixture is formed.
- Add boiled vegetables in prepared red gravy..cook for 2 mins. Serve hot mix veg curry with Naan or parathas.
