- Soak rava with curd and 1/4th tsp salt.Add little water to make a thick batter and keep it covered for half hour.Meanwhile heat 1 tsp oil and sprinkle mustard seeds and hing.Add the finely chopped vegetables and coconut.Add little salt, chopped green chillies and fried curry leaves.Toss all and add to batter.Add chopped coriander and ginger paste.Mash the boiled potato.Add chopped green chillies,coriander chopped,red chilli powder,ginger paste and salt to taste.Toss lightly.
- Make small balls of potato.Add Eno to the rava batter and beat well till fluffy.If needed add little water.Heat an appe pan.Pour few drops oil in each groove.Add a spoonful of batter in each groove.Stuff a potato ball.Cover the potato with some more batter.Cook on low flame till one side golden.Flip with a spoon or knife and cook the other side till crisp from outside and soft inside.Serve crispy golden appe with coconut or green chutney or mixed pickle.
