- Get Vegetables:
- Prepare 1/2 cup chopped carrot
- Make ready 1/2 cup chopped beans
- Take 1/2 cup chopped okra

- Take 1/2 cup chopped raw papaya

- Take 1/2 cup finely sliced onion

- Prepare 1 bunch curry leaves
- Take 2 tsp Coconut oil

- Get 1/2 cup Cashew nuts
- Make ready 5-6 green chillies
- Get 1/4 tsp Turmeric powder
- Take 1/4 cup coriander leaves
- Prepare 1 tbsp fresh cream
- Get 2 tsp coriander powder
- Prepare 4 tbsp kasuri methi
- Make ready 1 lemon juice
- Get to taste Salt
- Get Water as required

Instructions to make Methi Veg korma:
- Make a fine paste of cashew nuts, green chillies, coriander leaves, Turmeric powder and keep aside
- Heat coconut oil in a pan. Add Nigella seeds. Wait for a minute
- Add curry leaves and garlic. Fry well..
- Add onion.. saute well.. cook till transparent. Add little salt
- Then Add tomatoes and fry till it's tender.
- Add all vegetables and fry for 7-8 minutes or till the raw smell gone.
- Add above ground paste and fry for 2-3 minutes.
- Add water and cook till vegetables done.
- Add coriander powder, lemon juice and mix well. Check seasoning.. Add salt if required.
- Put in kasuri methi and mix well.
- A minute before switching off the stove, add fresh cream and mix well.
- Serve hot with rice / naan
