In my family, this smoky, crispy, North Indian-style okra is an iconic, clamored-after dish. The key is to cook the okra for a long time, with a lot of whole spices. It's a foolproof and quick way. Okra Sabzi or Bhindi Sabzi, also known as Lady's Finger Sabzi - is one of the quickest and easiest curry dish to prepare with just a handful of ingredients.

The ingredients needed to make Okra Sabzi:
- Take 500 grams Chopped Okra.
- Take 1 medium Tomato
- Prepare 3 tsp Fresh Ginger Garlic Paste
- Get 1 small Chopped Onion
- Prepare 3 Green Chilies, Chopped
- Take 1 tsp Cumin Seeds
- Make ready 5 Curry Leaves (Optional)
- Make ready 1 Salt
- Make ready 1 Turmeric
- Get tbsp Oil
- Get 1 tbsp Coriander or Cilantro

- Heat Oil in a Wok and add all the aromats. The Curry Leaves, Cumin, Onion, Ginger Garlic Paste and Chillies.
- By now, your whole house would be smelling amazingly! After the onion starts to change color add the salt and then add the chopped okra.
- Now this is a strenuous job as you have to cook the okra till the stickiness of the okra is gone. This takes about 10 minutes and you need to stir it all the time.
- After the stickiness is gone add turmeric and tomato. Close the lid and keep it on lowest possible flame for 10 minutes. After its cooked, add chopped cilantro or coriander and serve.
