- Get as required Some chopped coriander
Steps to make Dudhi Muthiya:
- Take a bowl, add grated dudhi, turmeric powder, red chilli powder, 1/4 tsp hing, eno soda, 2 tsp oil, curd, 2 tsp sugar, 2 tsp lemon juice,ginger chilli paste, salt to taste. Mix well, until bottle gourd and all ingredients release little water.
- Now add all 3 flours, mix well, knead a semi soft dough, mostly there is no need to add extra water to knead dough, if you need add little water.. Make muthiyas, with the help of your palm and fingers. Keep pressure cooker on medium flame of gas, put muthiyas in a greased vessel, close lid, steam it till 5 whistles, or in a steamer to steam for at least 20 minutes on a medium flame.
- When pressure cooker cools down, open it, take out muthiyas, keep aside for 5 minutes to cool it, then cut into pieces. Take a pan, add oil, mustard seeds, coriander seeds, til, hing, curry leaves, dry red chillies, saute for a minute. Now add cut muthiyas, mix well.
- Saute for couple of minutes. Add 2 tsp lemon juice and 2 tsp sugar, mix well, add some chopped coriander.. Turn off gas.
- Healthy, nutritious, tasty Dudhi Muthiya is ready to serve.. Sprinkle some coriander on it. Serve hot with any dip like chutney or ketchup..
