- In a kadhai add oil and when it is hot add cumin seeds, asafoetida, curry leaves, bay leave and cloves. When it starts crackling add chopped green chilli, garlic, ginger and fry for few minutes. Then add chopped onion.
- Onion fry lightly till it soft and turn pink well. Add red chilli powder, coriander powder, turmeric powder, dry mango powder and salt. Mix well and fry for a minute.
- Add the chopped tomatoes and mix well. Fry for about 2-3 minutes and covered till the tomatoes becomes soft and mushy.
- Now add garam masala powder and mix well. Cook for a minute and until the curry turns thick. Switch off the flame.
- Serve tomato curry with chapati.
Use it to make delicious meat curries too! Add curry leaves followed by onion, garlic and ginger and fry well. Add tomato and saute, till it blends well. Add all masala powders and fry again. Add water and boil, till the curry becomes thick.
