Instructions to make Lauki Kofta Curry:
  1. Peel lauki and wash it then grate it with hand grater. (Kadokush krlein).. - Sprinkle 1 tsp salt on grated lauki and keep aside.
  2. After 10 mins press lauki with hand or wooden spoon and remove all water it release.
  3. Now add red chilli flakes, quarter tsp turmeric powder half tsp red chilli powder, juice of one lemon and quater tsp garam masala add gram flour and mix.
  4. Add Cube cut onion corrainder and chillies. Make a smooth balls like we make koftay.
  5. In wok take oil and warm it then turn flame at medium and deep fry them until golden brown turn when one side is fully fried otherwise it will break. (At this stage you can freeze these koftay for later use also)
  6. Blend one sliced onion and tomatoes.
  7. In pot take oil add quarter tsp fengrueek seeds and cumin seeds let it fry for a second then add blended onion and tomato paste.
  8. Add red chilli powder corrainder powder salt and turmeric powder. Bhoonofy the masala until oil separated now add fried lauki balls with little water (depend on gravy you want).
  9. Add green chillies and corrainder leaves, Cook on dum for 15 mins sprinkle garam masala powder, and 1 tsp lemon juice and mix.
  10. Serve with zeera rice or chapati.
