- Take 2 cups wheat flour
- Prepare 1/2 cup grated bottle gourd /lauki
- Get 3-4 tsp jagerry

- Take 4-5 curry leaves
- Take 1 tsp Sesame seeds(white til)
- Make ready 1 pinch hing/ asafoetida
Lauki halwa or Dudhi halwa is a sweet Indian dessert made from bottle gourd or opo squash. Lauki halwa is easy to make but takes some time. Like gajar halwa, lauki halwa also has to be stirred. Dudhi Muthiya is a Gujarati delicacy made with grated bottle gourd, fresh fenugreek leaves spiced with green chilies, ginger My favorite is with fresh dudhi (also known as lauki, bottle gourd or calabash).
Instructions to make Dudhi lauki muthiya:
- Take a kneading plate add 2 cups wheat flour, grated bottle gourd, salt, garam masala, haldi powder, chilli powder, fruit salt, curd, ginger chilli paste jaggery &mix it well.
- Make a dough don't give pressure. Keep it soft. Now make muthiyas & put it into grease plate.
- Steam it for 20 to 25 minutes in steamer.
- Now take it out & rest it for 15 minutes.
- After that cut the muthiya rolls. Take a pan take 2 tbsp oil heat oil add musterseeds, curryleaves, seasme (til white) a pinch of hing sorte all this for 1 minute and add muthiyas give it a good mix.
- Serves with sauce, chutney or tea
- We gujaratis eat muthiyas with tea.
