Instructions to make Vegetable Kadhi Jeera Rice:
  1. For vegetable kadhi.. chopped all mentioned vegetables. Blend besan in buttermilk to make smooth mixture with beater.
  2. In kadhai heat ghee. Add cloves, cinnamon sticks, cummin seeds,bay leaves,red round chillies, green chillies ginger paste, curry leaves.
  3. Add chopped onion and brinjal and saute for 2 mins. Add chopped carrot and saute for 1 minute.
  4. Add buttermilk- besan mixture,salt and jaggery.mix well. Boil and simmer for 10 mins on slow flame.
  5. Serve Hot vegetable kadhi garnish with chopped coriander leaves.
  6. For Jeera Rice.. Wash and soak rice for 1/2 hour. Steam rice in pressure cooker for 2-3 whistles.
  7. In small tadka pan add heat ghee. Do tempering of cummin seeds and bay leaf. Pour this tadka on cooked rice. Mix well. Sprinkle chopped coriander leaves at time of serving.
