  1. Make ready 2 onions roughly chopped
  2. Get 2 tomatoes roughly chopped
  3. Prepare 1 cup cashews
  4. Prepare 2 Bay leaves

  7. Prepare 4 tablespoonsghee
  8. Get 3-4 Redchillies
  9. Prepare 1/2 Cupfresh Malai/Cream

  17. Prepare 1/2 Tsp Dry Fenugreek powder

Indian specialty Cashew nut curry is extremely delicious. Add all the Kaju Curry Gravy Ingredients listed above to a mixer jar and grind it in a mixer grinder to a smooth paste. The kaju masala curry is rich, creamy and on the sweeter side. Its also mild and not spicy, so good for kids.

Instructions to make Cashew/Kaju curry:
  1. Take a kadhai/Pan.Add 1 tablespoon ghee.Add Bay leaves,cloves,cardamoms,red chillies and saute them
  2. Add Onions and cook them until they get little soft.Add tomatoes and 4 to 5 cashews in this pan.Add 1/2 teaspoon salt.Cover the pan and cook it for 3 to 4 mins.Cool this mixture and make a paste in the mixy jar
  3. Take another pan.Add 3 tablespoons ghee to it.Roast Cashews in it.Take out the cashews in a plate.Now to the same kadhai add cumin seeds,Red chillies.Cook for 1 min.
  4. Add the mixy jar mixture which we made in step 2 and add all spices except salt.Cover it and cook for 5 mins.
  5. Add fresh cream or malai to it.Add salt as per taste.Cook it for 3 to 4 mins in a slow medium flame.
  6. Add milk to it.Cook for few mins till all ghee separates from pan.Add roasted cashews to it.Cook it for 1 to 2 mins.Pour this curry to a bowl.
  7. Your kaju curry is ready.Garnish it with coriander leaves,Cream or malai and some roasted cashews.
  8. You can enjoy this yummy kaju curry with Naan or pulav or Chapatis..
