The ingredients needed to make Illish Bengali Curry:
  1. Make ready 400 g Illish fish (cut into 9 pieces)
  2. Make ready 40 g Mustard powder
  3. Take 2 tomatoes
  4. Take 4-5 Green chillies
  5. Get 100 g Curd
  6. Take Half teaspoon Cumin seeds
  7. Get Half teaspoon Turmeric powder
  8. Take 1 third teaspoon sugar
  9. Make ready 2 tablespoon Mustard Oil
  10. Make ready to taste Salt

Sorshe and ilish both are Bengali terms, mean mustard, and Hilsa fish respectively. That means sorse or mustard paste is an important ingredient in this recipe other than ilish mach or hilsa fish. Sorshe ilish is a traditional Bengali style dish made from hilsa or ilish, a type of herring, cooked in mustard gravy. Hilsa is known to be as "queen of the fish".

Instructions to make Illish Bengali Curry:
  1. Wash the fish properly and keep it aside.
  2. Now heat the oil in a kadhai, put the cumin seeds, green chilli and diced tomatoes into it.
  3. Meanwhile, add the turmeric powder to the fish and mix it properly.
  4. Now take a bowl and make a semi thick paste of mustard powder and water.
  5. Pour this paste in the kadhai, when the tomatoes are sauted.
  6. Fry for 3-4 minutes and then add the fish.
  7. Now, add the curd to it, along with sugar and mix it slowly.
  8. Keep frying untill you see oil coming out from the gravy (7-8 minutes). Now add salt to taste and pour some water into it.
  9. Simmer for 3-4 minutes. Serve hot..!!
  10. NOTE: Illish is a very delicate fish, handle it with care while frying or it will break very easily. Also the sugar should be in a very less amount because it's the taste of salt that prevails.
