The ingredients needed to make Mango Launji:
  1. Get 500 gm raw mango
  2. Get 200 gm jaggery
  3. Take 1 cup water
  4. Take 1/2 tsp cumin seeds
  5. Take 1/2 tsp fenugreek seeds
  6. Get 1 tsp fennel seeds
  7. Take 1/4 tsp mustard seeds
  8. Make ready 8-10 curry leaves, chopped
  9. Make ready 3/4 tsp salt
  10. Get 1 tsp black salt
  11. Get 1/2 tsp turmeric powder
  12. Prepare 1/2 tsp red chilli powder
  13. Prepare 1/2 tsp garam masala
  14. Take 2 tbsp oil

Aam ki Launji is a sweet and spicy chutney made of raw green mangoes. It's the perfect accompaniment to Indian meals and also tastes amazing with paratha! Mango Chunda is made in Gujarat by grating raw mango, whereas in Uttar pradesh and Rajasthan Raw Mango Launji is prepared in summers. You can pack this recipe with parantha is your kid'ss tiffin.

Steps to make Mango Launji:
  1. Wash, (peel/unpeeled)and cut the raw mangoes into pieces.(I haven't peeled to keep the mango pieces intact.
  2. Fry the cumin, methi and fennel seeds in slow flame. Grind to powder when,cool down.
  3. Chop the jaggery into small pieces.
  4. Heat the oil. Splutter mustard seeds in hot oil. Add the curry leaves.
  5. Add the chopped mangoes and mix well with oil mix.
  6. Add both the salt and turmeric powder and red chilli powder and coat well with the mangoes.
  7. Cook for two minutes, covered. Then add 1 cup water. Mix the jaggery and cook covered,till mangoes are softened.
  8. Switch off the flame and mix well,the ground masala and garam masala. - - Mango launji is ready to serve with roti, poori, parantha and steamed rice - Thanks
