Instructions to make Mango pachidi:
- Melt jaggery in 1 cup of water and filter it to remove any impurities. Keep aside.
- Take a pan add oil, once hot add Fenugreek seeds, mustard seeds, and wait untill it crackles. Then add asafoetida, neem flower, curry leaves and onion. cook until translucent.
- Add chopped mangoes, haldi, red chilli powder, salt and 2 cups of water. Check if mangoes are half cooked, this is the right time to add Jaggery water. Cook mangoes throughly untill jam consistency. Mango pachidi is ready to serve.
- Note: Always make jaggery water before you proceed. You can also add dry red chillies instead of chilli powder. Choose Bangalore mango(kilimuku mango/thothapuri) for this recipe.
