The ingredients needed to make Dhaba Chicken:
- Take 500 gm chicken on bone, curry cut, washed,
- Prepare For meritnation–
- Take 7-8 garlic grated,
- Take 1 inch ginger grated,
- Take 1 tbsp green chili paste,
- Prepare to taste, salt
- Prepare Curry masala –
- Take 1 tsp dhania seeds,
- Take 4 small Elaichi,
- Get 1 tsp black pepper corns,
- Make ready pinch of Jeera,
- Get 3-4 cloves
- Get 4-5 dry red chilli,
- Make ready 1 very small pc of javitri,
- Prepare 4 tbsp mustard oil,
- Make ready as required whole garam masala -
- Take 1 tejpatta,
- Get 1 Bari Elaichi,
- Make ready 1 pc dalchini,
- Prepare 3 med sized onion chopped finely,
- Make ready 1/2 tsp haldi powder,
- Get 1 tsp Kashmiri red chilli powder,
- Get 1 tsp dhania powder,
- Prepare 4 tbsp fresh tomato puree,
- Get to taste, salt
- Prepare 1/2 tsp garam masala powder,
- Get 2 tbsp desi ghee,
Instructions to make Dhaba Chicken:
- Take a mixing bowl, add chicken, garlic, ginger, green chili paste & salt, mix it well, keep it in the fridge for 2 hours.
- Now take a pan, add all the given ingredients of curry masala, dry roast for 5-7 min. Take out in a dish, let it cool down.
- Take a mixer jar, add roasted masala, grind it to a powder, keep aside.
- Take a heavy bottom wok, add oil, heat it.
- Add whole garam masala, saute it for a sec.
- Now add onion, stir fry it until light brown.
- Add merinated chicken, stir fry it for a while.
- Now add haldi, dhania & red chilli powder, also add salt, sprinkle some water, stir fry it till oil has oozed out.
- Add tomato puree now, stir it nicely, cook it covered at low flame till oil separates.
- .Add 1 tsp curry masala, mix it well.
- Add ghee & garam masala powder (optional), give a stir.
- Increase the flame, add water accordingly so as to keep a saucy consistency. Give a boil.
- Lower the flame now, cover it with the lid, cook it till done. Switch off the flame, open the lid after a while.
- Take out in a serving bowl, garnish it with chopped dhania patta.
- Have it with Tandoori Roti or Lachcha Paratha.
