  1. Take 1 cup beetroot very finely chopped
  2. Prepare 1 medium size chopped onion
  3. Make ready 1/4 tsp mustard seeds
  4. Take 1 tbls mustard oil
  5. Take 10-12 Curry leaves
  6. Make ready 1/2 tsp Salt
  7. Get 1/2 tsp Cumin powder
  8. Get 1 green chilli chopped
  9. Prepare 1 cup thick curd
Steps to make Beetroot Pachadi:
  1. Peel the beetroot and wash. Cut into slices and then chopped very finely.
  2. Take a pan add oil and heat it.add mustard seeds and saute when it crackles add Curry leaves,onion and green chilli.saute for 2-3 minutes untill the onion become translucent.
  3. Now add the finely diced beetroot and stir-fry on high heat. Add enough salt and cook till the moisture has completely evaporated and the beetroot is cooked tender. - Remove from heat and allow to cool completely.
  4. Beat the yoghurt well till smooth. - Add the beaten yoghurt to the cooled beetroot a little at a time and mix till you achieve a smooth consistency as well as a beautiful lightened beetroot colour. Now serve with rice
