- In large dutch oven, brown meat and set aside. In same pot add 1 tablespoon vegetable oil and saute carrots for 3 minutes.
- Add onions and garlic and cook 2 minutes. Then add all the spices.
- Return beef to pot. Add in beans, tomatoes and potatoes.
- Pour in broth and bring to boil. Reduce heat to simmer and cook 20 minutes.
- Add in kale and cook another five minutes.
- Once served I top each serving with some grated parmesan cheese.
