  1. Make ready 1 cup Brown rice (dry)
  2. Prepare 2 cups Beef Stock
  3. Make ready 2 small carrots, sliced
  4. Get 1/2 small onion, diced
  5. Prepare 1/2 medium green pepper, diced
  6. Prepare 1 cup water
  7. Make ready 1/2 cup (1 leaf) Kale, chopped
  8. Make ready 1 cup taco ground beef (leftover)
  9. Get 3 Tbsp bacon bits (I use home cooked crumbled bacon)
  10. Make ready 1 Tbsp minced garlic
  11. Get 1 Tbsp Olive oil
Instructions to make Brown Rice Dinner:
  1. Cook the rice in the beef stock. (Usually takes about 40min)
  2. While rice is cooking, chop/dice/slice all veggies. When prepped, add kale to rice and continue cooking.
  3. In a sautee pan, heat oil, then add garlic and onion. Cook until clear, or just before beginning to brown on edges.
  4. Add carrots, green pepper and water. Boil until water is almost evaporated, or carrots are tender.
  5. Add ground beef and bacon, simmer for about 5min.
  6. Mix with rice and serve:-) Ours was yummy!!!! (even my 2year old loved it!)
