The ingredients needed to make Pastelon:
- Get 7 packages Goya brand sweet green bananas (Maduras), thawed
- Make ready 1 1/2 lb ground beef
- Make ready 2-3 tbsp adobo (or to taste)
- Get 2-3 tbsp black pepper
- Make ready 1 (8 oz.) can diced tomatoes, undrained
- Get 6 large eggs, beaten
- Make ready 1/2 envelope sazon
- Make ready 1/4 cup sofrito
- Make ready 1 tbsp minced garlic
- Prepare 1 medium diced onion
- Prepare 1 can green beans, drained (optional)
- Make ready 1 1/2 packages mixed colby jack shredded cheese
Pour mixture into a bowl; cover and refrigerate until ready to use. There are a lot of dishes that make me think of home, but, there is no doubt that my favorite is Pastelon. It's one of those dishes that I don't get to enjoy often so when I do it's a real treat. If you're not familiar with pastelon, your life is incomplete.
Instructions to make Pastelon:
- Brown beef with all seasonings, sofrito, & onion. Then add tomatoes. Cook till some of liquid evaporates, then set aside.
- Preheat oven @ 375°. In a greased with butter 9x13 or lasagna pan, layer the tostones covering bottom of pan in 1 layer.
- Top with ground beef mixture, then green beans, & then cheese. Repeat for 2 more layers.
- Pour beaten eggs over whole dish, especially the corners. Fork so the egg can distribute through because it acts as a binder for cutting later (like lasagna).
- Top with layer of cheese, cover with foil & bake for 30 - 40 minutes. Let stand for @ least 15 minutes before serving to make sure the egg binds it better. Then serve with green beans or salad.
It's one of those dishes that I don't get to enjoy often so when I do it's a real treat. If you're not familiar with pastelon, your life is incomplete. And have my quick pastelon version already divided and ready to go! For those days you dont have the time to fry all the ripe plantains AKA maduros! Thought I'd share… Although the original recipe is the best!
