I can make them ahead of time and the plop them on the grill or oven in time to feed my hungry crew. I love kebabs because you can customize them for each person in your family. When using more than one kind of meat, put in separate bags. Let kebabs rest (tented with foil, if you want) for a few minutes before eating so that juices redistribute throughout the meat.

- Boil the mince till tender and dry. Grind the mince with 3 onions, 12 green chillies, 1/2 bunch coriander leaves. Add 1ts all spice, 3tsp coriander powder, red chilli powder 3tsp and again chopped the mixture. Method for gravy: Heat oil, add onions, fry till very light brown. - Dip in beaten egg then roll in breadcrumbs and deep fry the kebabs. Place kebab in foil and pour inner 1tbsp of gravy and seal them.
- Place all the pieces in hot oven for 15-20 minutes at 180C.
