  21. Make ready 3 button chilli
  22. Get 1 tsp cumin
  23. Take 2 inch piece cinnamon
  24. Get 1 star anise
  25. Take 1/4 tsp Nut meg
  26. Make ready 1/4 tsp Mace

The mince is cooked with aromatic spices and fresh herbs, and then is smoked to give it this intense mouth watering flavour. Instructions to make Dum keema:
  1. Beef should be finely grounded and free of any water.
  2. Add papaya paste, garlic ginger paste, salt, chilli powder, garlic powder, whole spice powder, turmeric and coriander powder. - Mix well.
  3. Smoke ground beef with a piece of charcoal and set it aside for at least 1 hour.
  4. After 1 hour remove coal, mix all the other ingredients in mince beef.
  5. Marinate for at least 2 hours.
  6. Heat oil in a pan to shallow fry. - Make kababs of your desire shape. - Shallow fry on medium heat until done.
