  10. Get 3 cup freshly grated smoked cheddar
  11. Take 1 cup freshly grated cheddar cheese
  12. Make ready 1/2 cup butter
  13. Prepare 8 cooked bacon slices, chopped
  14. Get 3/4 cup of breadcrumbs

Cook macaroni as directed on package. Meanwhile, melt butter in large saucepan on low heat. Gradually stir in milk; cook on medium heat until mixture comes to boil, stirring constantly. To serve, scatter the bacon mixture over the mac and cheese.

Instructions to make BACON MAC & CHEESE:
  1. Preheat oven to 350
  2. Bring 1 gallon of salted water to a boil in a lager pot; add the pasta. Cook pasta about 8 minutes or until al dente. Drain; rinse with cold water and toss with 1 Tbsp Olive Oil.
  3. Melt butter in a large saucepan over medium-high heat. Add onion, and sauté until tender. Add flour and cook, whisking constantly for 1 to 2 minutes until smooth. (Do not let the flour brown)
  4. Add half and half, heavy cream, BBQ Sauce, white pepper, and sea salt, bring to a simmer.
  5. Cook, whisking constantly for about 6 minutes or until thickened. Gradually all cheese, 1 cup at a time, stirring until blended.
  6. Transfer mixture to a large bowl; stir in cooked pasta. Spoon into a lightly greased 13 X 9 inch baking dish. Sprinkle bacon and bread crumbs over the top of the pasta and bake at 350 for 20 minutes or until golden and crisp on top.

Gradually stir in milk; cook on medium heat until mixture comes to boil, stirring constantly. To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful. Line a large baking sheet with foil and lay each slice of bacon down with at least an inch of space between each slice. It will crisp even further once it's baked, so don't crisp it too much at this stage.
