- make up some cheese sauce using less water to make it thicker, make enough for a decent layer
- Use a seeded bagel thats gone a little hard and grate into breadcrumbs and cover the cheese sauce. Put a few knobs of olive spread ontop and bake for 25mins in the pre heated oven.
Place the chicken on the other side of the baking sheet. I served it with pita bread, and we ate the eggplant/chicken over the toasted pita. I did make changes, which I think made a huge difference. For each serving made, I added a clove of minced garlic when I cooked the onions and chicken (I only made two servings, so I added two cloves of garlic). Turn the eggplant over and mist again.
