  10. Prepare 1/4 tsp garlic powder
  11. Prepare 1 1/2 to 2 cups shredded cheese your choice - i use mexican blend

  1. Preheat oven to 350
  2. Melt butter in a frying pan. Saute onion & green pepper over medium heat for 10 -15 mins or until onion is translucent or browned - your preference. Remove from heat.
  3. Dice ham steak - remove any fat & casing on edges.
  4. Grease a 13x9 casserole dish. Evenly press in seasoned potatoes.
  5. Evenly spread onions, green peppers & ham on top of potatoes.
  6. In a medium bowl, whisk together 8 eggs, 1 cup milk, salt, pepper & garlic powder.
  7. Pour on top of casserole.
  8. Sprinkle on 1 1/2 to 2 cups shredded cheese.
  9. Bake, uncovered, 40 - 50 mins - till eggs are set & top is golden brown.
  10. Remove from oven - let sit for 5 - 10 minutes before cutting & serving. Salt & pepper to taste if desired.
  11. This is a BIG breakfast - recipe can easily be cut in half. I usually make this on the weekends when I want to sleep in - breakfast & lunch served at once lol. Enjoy…psychobetty…XOXO.
