Since I discovered that store bought Granola often contains quite a lot of sugar, I have been making this Granola (Oven-baked Muesli) by myself. The ingredients are almost identical with my Muesli Bar ingredients.

The ingredients needed to make My Granola (Oven-baked Muesli):
- Prepare 5-6 cups Rolled Oats *OR whole bag of Rolled Oats
- Prepare 2 Ripe Bananas
- Take 3-4 tablespoons Coconut Oil OR Canola Oil
- Make ready 1-2 tablespoons Honey *optional
- Take Dried Fruit & Nuts & Seeds & Shaved Coconut of your choice
- Get *e.g. Roasted Almonds, Pepita (Pumpkin Seeds), Sunflower Seeds, dried Sultanas, Currants, Raisins, Cranberries, Apricots and unsweetened Shaved Coconut Chips, etc
Pour mixture onto prepared sheet and spread into an even layer. I adapted this easy-to-make granola from the first Harrowsmith cookbook (I made a big reduction in butter and it still works). Because we have a houseful of people, I usually double the amounts shown here. If you feed a crowd, too, make sure you have a large enough pan.
Instructions to make My Granola (Oven-baked Muesli):
- Preheat the oven to 160°C.
- Melt Coconut Oil and mash the ripe Bananas very well. The sweetness comes from the Bananas, but you may wish to add 1 to 2 tablespoons Honey for extra sweetness.
- Combine Oil, Bananas (and Honey), then add Rolled Oats and mix well.
- Turn out the mixture onto a baking tray and bake for about 40 to 50 minutes or until the mixture is light brown and toasty. *Important: You need to stir and turn the mixture several times for even colour and to make sure the mixture is cooking evenly.
- Roughly chop the nuts and dried fruit if they are large.
- Remove the mixture from the oven and add the other ingredients, and mix evenly.
- Let cool before enjoying. It is so nice with unsweetened fresh yoghurt and fruit.
Because we have a houseful of people, I usually double the amounts shown here. If you feed a crowd, too, make sure you have a large enough pan. Changes include: adding a method to make clumpy granola without adding more sweetener or fat, for the loose granola, adding the dried fruit at the end which ensures none of it burns (sometimes, some fruit on the surface can get a little too brown). Peanut Butter & Jelly Granola: Combine oats with salted peanuts and pecans. In a medium saucepan, melt peanut butter, honey and strawberry jam together.
