The ingredients needed to make Mackerel Sprinkles:
  1. Make ready 160 g Mackerel *canned in brine, OR cooked fresh fillets
  2. Make ready *Note: Today I used 2 x 125g cans and had 160g Mackerel meat
  3. Prepare Salt *only if required
  4. Take 1 teaspoon Oil
  5. Make ready 1 small piece Ginger *finely chopped
  6. Take 1 tablespoon Sake (Rice Wine)
  7. Make ready 1 tablespoon Soy Sauce
  8. Make ready 1/2 tablespoon Sugar
  9. Get 1 tablespoon Toasted Sesame Seeds
  10. Make ready 1/2 sheet Toasted Nori *torn into small pieces

Sprinkle fish inside and out with kosher salt. Turn on stove to medium heat and add olive oil to a skillet pan. Once skillet pan is hot, add Mackerel to the pan. Both salmon and mackerel are sweet, oily fish, so it's an easy swap to make.

Steps to make Mackerel Sprinkles:
  1. Mackerel needs to be cooked, grilled, boiled, microwaved or baked. Today I used 2 x 125g cans (in brine), from which I had 160g meat.
  2. Remove bones and flake the Mackerel meat using a fork, and check the saltiness. Season lightly with Salt if required.
  3. Heat a small amount of Oil in a frying pan, place Mackerel, Ginger, Sake, Soy Sauce and Sugar. Cook over a low heat, stirring constantly, until dry and moisture is evaporated.
  4. Remove from heat and cool completely. Add Toasted Sesame Seeds and Toasted Nori, and enjoy with freshly cooked rice.

Once skillet pan is hot, add Mackerel to the pan. Both salmon and mackerel are sweet, oily fish, so it's an easy swap to make. Whole mackerel comes cheap at most fish markets, and they're (fairly) easy to fillet following the hilariously detailed instructions in the River Cottage Fish Book. Slice or flake the salted mackerel, remove the bones is optional. Put a skillet or Dutch with the oil to hot on low heat.
